Mark Little at the time did some commentary while watching the final episode on the BBC which was on YouTube. He seemed annoyed that they didn't say much about the final episode on the BBC.
The following article gives a little more background into the cancellation of Neighbours on Five and what to expect on finale night. From a presentation point of view, it mentions countdown promos, a special ident, and that the continuity announcer for the evening will be Alan Fletcher, who played Karl Kennedy.

Sounds like the UK is getting a different edit of the finale.

In this recent interview with Peter O' Brien on the official Neighbours Youtube page, some footage from the 80's appears to be in 16:9 or has it been stretched and zoomed?

Quite clearly zoomed in, the framing and quality gives that away. No way they'd actually have been done in 16:9 back in the 80s.

I was hoping some kind of re-mastering like Friends had gone on at some point but that would have been very unlikely just for those short clips.

Neighbours was shot on video anyway, so can't have the sort of remastering Friends had, which was shot on film.
Yep Neighbours will permanently be in the world of analogue 80s OB.
Not that HD remastering is always a good thing- quite often it exposes flaws in makeup, sets, costumes, effects etc. as nobody making the shows ever intended them to be seen in that sort of quality. Though a lot of pre-2000s SD transfers of film material are pretty awful. The original versions of Cheers looked for example are terrible (even compared to other shot on film, edited on NTSC video shows of the era), even the SD downscales on the DVDs of the remasters look hugely better than the originals- on the occasions where they have to use the original transfers for some shots, presumably due to them not being able to find the original film, the difference in quality is shocking.
Though even with SD videotaped material you can often see these things too, with us watching on bigger screens than were around back then and clean digital broadcasts and DVDs, rather than analogue broadcasts with noise and interference.
And thanks to overscan not being a thing anymore, often things that weren't supposed to be in shot. Boom mics are a regular culprit!
My favourite one though is on the penultimate scene of the final Young Doctors where a camera very clearly wheels into shot!
