Question is not "Do we have it?/Could we show it again?" but "Would enough people watch it?". If only a tiny number of people would watch an old gameshow which they haven't heard of, but a much larger number of people would watch something they recognise and know they like - such as The Chase, Pointless, Millionaire, Bullseye - then the choice for any commercial business is sadly going to be the more lucrative (if less interesting) option.

8 out of 10 cats is not a gameshow.  It is a comedy panel show.  If you had suggested 8 out of 10 Cats does Countdown then while it is still a panel show (effectively) it is one with a gameshow wrapped (albeit loosely) around it.

Everything on that list you've posted (aside from Shooting Stars, Impossible, The Wall and possibly The Mole)) has already been through the Challenge mill.  This includes Fun House, Finders Keepers (STV version because of... reasons) and Impossible Games is probably bit too niche and 50/50 is out of their target audience.  As for Buzzococks, well Sky picked that up last year as a new series.

Shooting Stars and Impossible have both aired on Challenge before.

S6 of Strike It Lucky’s set was awfully ugly… the brown does not suit it at all. Glad they reverted back to the original the next year.

A single repeat of an original production can often be as much for accounting purposes as for any hope of attracting an audience. A repeat in a quiet slot once a year means that the original cost of production can be amortised across a further year, which is sometimes beneficial, for whatever reason.

You ought to see the set of the American show it was based on... Sort of inverse of Strike It Lucky Series 6 from the show's outset. More brown than you know what to do with!

Why in some series of Bullseye during the prize board round, the light would come on to represent a prize on the board being won, but in other series, the board would already be lit and the players would have to aim for the lights.. and the light would turn off to represent the prize being won?

Makes it awfully confusing in the repeat runs.

Well with respect if you pay attention it automatically tells you roughly how old the series is without having to wait for the credits as the clues are there.

Actual examples:
The "putting the lights out" on the prize board was a later addition to the format, and started around the time they shifted production to Lenton Lane.
The "three contestants in Round 2" started IIRC In Series 8 so if you see that it's automatically post 1988.
If dart boards are on the "left" and the prize board is on the right, it's pre 1984. If its the other way round it's 1984. If its all the left and its on the revolving stack (and there are neon lights everywhere) it's post 1985.
