So here in the southwest on Freeview 103 we saw "ITV Weather" for the UK, followed by "ITV Weather" for... Central?!
I don't usually watch ITV News, it was just on after The 1 %Club; does this happen often?
ITV Region: ITV News London
BBC Region: BBC London News
Freeview 103 in the West Country is ITV Central West due to ITV using macro regions for ITV HD. However this may change in the near future when the PSB3 multiplex is reconfigured to allow BBC One HD to show the local region instead of the network BBC One HD.
ITV Region: ITV News Tyne Tees
BBC Region: BBC Look North (NE)
Similar with Sky, on 103 (ITV HD) we get Tyne Tees, bu on 203 (ITV+1) and 803 (ITV SD) we get Granada.
There have been a couple of occasions where we got Border's weather rather than Tyne Tees' and once a few months ago where we got a combined Tyne Tees & Border forecast presented by Jon Mitchell!

Interesting! It was very odd to be given a nice detailed weather forecast for Birmingham and surrounds down here in Devon ?

With the exception of London, Granada, Central West, Meridian East, Wales and UTV, most ITV owned regions have regional news and weather from another part of the country on the Freeview version of ITV HD. STV HD is STV Central (West) throughout the two STV franchise areas in Scotland.
Granada Macro Region: Granada, Border, Tyne Tees, Yorkshire.
Central Macro Region: Central, West Country.
Meridian Macro Region: Meridian, Anglia.

Unless it's changed the weather units are at Manchester and Leeds. There is a weather chat in Calendar but the 6.25ish green screen is recorded so not live.
With regards to the wrong weather on saturday, there are a few studios operating as weather hubs for other regions then sent to playout. It's possible whoever edited them added the wrong content. As long as the file name was correct and there's a presenter with a map it'll get passed as ok for transmission.

The weekend hubs I believe are at Salford for the northern regions, Millbank for Central, London, Wales and Anglia and Whiteley for Meridian, West Country and Channel.

Does anyone happen to know why some regions seem to treat the weather differently - e.g. Anglia and I think Tyne Tees tend to have the weather as an entirely separate thing, very specifically after the news has ended, whereas most other regions seem to incorporate the weather as part of the news, before the final sign-off?

It's simply an historic thing.
For example, Yorkshire's Calendar weather was combined then seperate for a number of years until the new MD (pre Granada merger/takeover) wanted the weather team to be part of the 'family'. It fell into local programming anyway so made sense I guess plus sponsorship added to the budget.
