Rochelle is very good and has effectively been the third female host for a few years now. I think it's highly unlikely Ruth will return and though I agree next week as a farewell week would have been ideal, especially with Dermot and Alison seemingly not around, it was never going to happen.
I doubt Ruth and Eamonn would have returned next summer anyway but I suspect Eamonn may have left GB News by then anyway.

I know we will most likely never see the pair of them on together again unless as guests on some anniversary show (35th or something). However I really wanted Eamonn to be given the proper send-off he does really deserve.

You generally don't run a "best of" package for people you've axed. Also if Ruth were staying it would still be really odd for them to have a "farewell show" to Eamonn when you know the two of them will be heading back home after.
Must say though as much as they were a welcome alternative to Holly and Phil I'm struggling to think of any stand out moments either. They've not done much meme worthy - it would just be three minutes of them bickering.
